The intriguing cultures of this fascinating area are reflected throughout the many dining choices at Hyatt Regency Tamaya Resort and Spa. Our talented chefs have blended the authentic foods from both the local Hispanic community and the Tamayame with innovative twists, to create flavors that are unique to our Santa Ana Pueblo New Mexico restaurants. Traditional basics – including red and green chile, enchiladas, chorizo and pinon - are skillfully integrated with the freshest local ingredients into a mix of favorites dishes and nouvelle cuisine, producing menu offerings sure to please every guest in our NM restaurants.
The Corn Maiden
Named for the honored symbol of the Santa Ana Pueblo, Corn Maiden is a delightful setting for a special dinner or celebration. Spectacular views of the Sandia Mountains and classic adobe-style decor serve as the perfect backdrop to our delectable cuisine. Our "Beginnings" are offered Tapas style to promote sharing and multiple samplings of these delectable treats. Our Signature Rotisserie, prepared in our open exhibition kitchen, offers a melange of fresh spitfire grilled meat, fish and poultry, each with a unique New Mexican themed marinade. A strong regional influence along with hints of global flavors creates a treat for your palate, including:
- Beginnings – Choose from starters with a New Mexican influence including Green Chile Escargot, Buffalo Rib Eye Carpaccio and Smoked loin of rabbit
- Signature Rotisserie – Just a few of our creative selections include the Corn Maiden Classic with Chorizo Sausage, Fresno Chile Chicken, Rose Salted Beef Rib Eye, and Lavender Salted Shrimp or The Range featuring Wild Boar Cranberry Sausage, Rose Sea Salted Buffalo Rib Eye, Spicy Apricot Glazed Kurubota Pork Loin, Soy Orange Duck Breast
- Decadent Desserts - Difficult to resist include a trio of free standing Crème Brulee, spiced chocolate terrine with Sangria reduction and Passion Fruit Cheesecake with tropical fruit salsa gelee

No time for a sit-down breakfast? Stop by our general store for an invigorating cup of freshly brewed Starbucks coffee and a delicious pastry to start your day on the go. Our selection of sandwiches, salads and snacks are easily packed to take along on a picnic for a day of sightseeing and exploring the natural beauty of this area. The Trading Post also carries a full supply of sundries, logo wear and specialty salsas.

Meet Our Chefs
Chef de Cuisine Bruno Gras's Southwest and New Mexican culinary background enhance the Corn Maiden's strong regional influence.
Pastry Chef Darci Rochau, a graduate from the Culinary Institute of America in New York, has been the participant of the Culinary Olympics in 2001 and Winner of Chocolate Fantasy in 2002.
